What did I see at Ba Lee?

I went to Ba Le yesterday to try the sandwiches which have been oft-discussed here as of late. And they were very good (save for a couple hidden slices of jalapeno that temporarily set my world ablaze) and a fanstastic value.

The bakery was very busy during lunch so I had no time to linger and ask questions, and the din of the sing-song Vietnamese language was a bit intimidating.

But I did notice many, many packages of something that I couldn't identify. They were some kind of smallish rolls, about the size of a thumb, very red from the outside, almost a red-raw-meat color, with a small sliver of fresh hot pepper nestled next to each one. They were packed on white foam trays (like for grocery store meat) and covered in plastic rap. Anyone know what these were?
