Need help with Austrian classic dishes in Vienna

Hello. My husband and I are so excited to finally head to Vienna. We are staying near the Belvedere and would like to try a few variations of schnitzel and tafelspitz over the course of our visit. The research I have done thus far has led me to many places, some more tourist-oriented than others. I don't mind eating with other tourists but I would prefer to have a great rendition of these dishes. Are any of the following especially recommended, or should be taken off my list? Any others we should try? Right now we are looking at Plachutta Wollzeille and Plachutta Gasthaus zur Oper, Figlmuller, Zum Weissen Rauchfangkehrer, Puerstner, and Huth Gastwirtschaft.
