Austin Mex- What is wrong???

Ok, I'm venting so bear with me...

I've been for "mex" several times lately and had near awful experiences with the food and margaritas almost consistently. We've visited Curro's, Guerro's, Maudie's and several others and we've been disappointed by the bland, heavy, totally uninspired food each time. Chips are cold and stale, queso is like a brick, fresh tortillas are non-existent and everyone uses sweet & sour in their margaritas! I though Texas had good tex-mex. Even the tex-mex is gone and there is this cal-mex, random-mex, fusion thing going on. I'm originally from Texas and I've been away in NYC for the past few years, but I think that NYC actually has better mex than Texas- or is it just Austin? Now, much of the mex in NYC is more interior-ish than mex but the quality is much much higher regardless. Also, why is it so easy for me to shake up some tequila, cointreau and lime vs. these chemically sweet and sour things that are everywhere here. Sheesh, anybody with me on this?
