apple syrup

Someone recently gave me a bottle of apple cider syrup, which apparently is just apple cider boiled down and down until it loses enough moisture to achieve syrup-y consistency. Maybe I've just been missing the boat on this, but I'd never encountered it before, and *man* is it good -- dynamite on pancakes, waffles, etc. Probably good to cook with too, although I haven't tried that yet.
