This weekend I made a cake from this month's Gourmet - to sate my cravings for cardamom. It's for passover, made with matzo meal, eggs, grated apples, ground almonds, cardamom, sugar & salt. It tasted pretty good, but I didn't like the texture. Any suggestions for an apple cake with almonds & cardamom - made with flour? I looked through some of my cookbooks and didn't see anything that looked promising. I think I'm thinking of something pound cakish, with pieces of apple in it. Obviously I could add cardamom as flavoring to a recipe that does not call for it.
