Since this is the season of apple harvests around many parts of the U.S., I thought I'd post this recipe, (not my own) for a wonderful apple cake:
4 c. diced apples
2 c. sugar
1/2 c. oil
1 tsp. vanilla
Add apples to the above combination, stir until apples are coated.
2 c. flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
2 tsp. baking soda
Preheat oven to 350 degrees. Add dry ingredients to the apple mixture. Stir together until you have a nice batter. Put the mixture into a greased 9x13 pan. Bake for one hour.
This is good hot, warm or cold. If served hot, or warm, it is great with a side of vanilla ice cream, or just plain whipped cream. Y'all can also frost it, if the the desire grabs you. Excellent at room temp!
