Picked up a sprial cut ham at Costco (better, and half the price of Honeybaked) for dinner last month so had been looking for creative leftover options leading up to Easter (for a change). So I'm sharing my very favorite. I found it on a "Farm Home Life" website. I cook all the time, but I'm quite certain my husband thought this was the best thing I'd ever made! Simple and the ultimate comfort food.
Comfort Ham & Mac Casserole
1 16 oz. box macaroni (I used Rotini)
8 oz. sharp cheddar cheese
1/2 cup chopped onion
1 pound cut up leftover ham
1 cup sour cream
1 can cream mushroom soup
sauteed mushrooms (not in the original recipe but I had some in the fridg I wanted to use and it was a great addition)
TOPPING: 1/2 cup cornflake curmbs and 1/4 cup melted butted (I used Pepperedige Farm buttery crakers instead)
Boil macaroni for no more than 6 minutes (it needs to be very al dente, if it's too tender it will turn to mush when baked). Drain pasta and put it back in the pot. Add all of the remaining ingredients. Mix the cornflake crumbs and melted butter and spread it on top the casserole. Cover and bake for 40 minutes at 350. Take cover off and bake 10 minutes more.
