Just a little while ago (or so it seemed to me), I fried up a batch of browned onions. I think we were having khichri that night. Anyway, we bottled up the leftover onions and popped them into the fridge, figuring they would keep a week or maybe two, hoping to get around to them. Shortly thereafter I topped pirogis with them and they were still good. We still had a little bit left.
Yesterday I scraped the remainder out of the bottle to garnish another batch of pirogis. They had softened up some but were otherwise fine.
We try to label leftovers with the date we cooked them. The date on this bottle was 3/16/02! These onions were perfectly edible and flavorful after four months! Who would have thought they would keep so long? Now I want to make another batch and see just how long they'll go!
