I have recently started a craze over eggnog. I combine all my ingredients, minus the egg whites, in one bowl, and then whip the whites separately and combine at the end. However, I recently heard about aged eggnog (a few weeks to a few months depending on what you read) to mellow the flavors a bit, and as a way to get rid of any possibly present salmonella. However, I'm not sure how to do this with whipped egg whites, it seems like they would dry out or I'd have to sacrifice my frothiness to try aged nog. Any thoughts?
