Advice on Tart Pan

mrand | Dec 19, 201804:03 AM

I am going to make a tart for Christmas so I need a tart pan. I am attracted to the pans with removable bottom. (I do have the springform pans with this feature).

Also I noticed that there are some tart pans with perforations either on the bottom only, or on the bottom and sides, supposedly for more even cooking.

I am going to be making a paleo crust, using almond flour, so I was thinking this might be helpful. Almond flour can burn so having it cook on both sides might reduce the risk of too much browning on the exposed side.

In any event I would be grateful for any comments, suggestions or advice.
