Advice for high end sushi in Ginza for first time visitor? (Sawada, Hashimoto, Taichi, Keita, Ishiyama, Ryusuke, Harutaka, Ginza Iwa)?

My wife will be visiting Tokyo for the first time in April (honeymoon!). Our hotel is in the Ginza district, so we would naturally want to visit a Ginza sushi-ya. We speak no Japanese but are well versed in good sushi etiquette.

I understand it is impossible for gaijin to make reservations to the top spots (Jiro, Saito, Sugita, Mitani, etc.), so we will save the effort and look elsewhere. Sawada seems hard but possible, so I might try that first, since it is extremely close to our hotel. But in the likelihood of failure, Hashimoto, Taichi, Keita, Ishiyama, Ryusuke, Harutaka, and Ginza Iwa all seem worthy of a visit, are all walkable from our hotel, and do not seem impossible to book. Do any of those standouts amongst an already competitive group?

I see that Umi, Masuda, and Taku are also available for booking, but we would have to take a taxi or train to get to those shops. We will certainly go, however, if any of these are the best options of what's listed here. Please let me know!

It also does seem possible to book 2nd counters with the sous chef at other high end spots like Arai and Hakkoku in Ginza. But that option seems disappointing - a bit like being forced to sit at the kids' table. But I would consider those seats as well if they come highly recommended!
