How much in advance can I make.....

I am planning to make a very large batch of shrimp creole for our post 4th of july (July 5th) party. I am planning to make the shrimp separately at the last minute. I want to make the roux-based tomato-type sauce early and bring it (we are driving a long distance). How early would it be safe to make it to serve on the 5th?
