I was at Seven Acre Poultry Farm in North Reading yesterday for the first time in well over a year and was happy to see a sign that the frozen cutlets were available (4 to a bag, for $7). This is not something they always stock. Why the heck did I only buy one bag??? I first had them several years ago and they are very delicious. They are thin enough to sautee from frozen - I don't think I've ever thawed them first. I know that the farmer's wife makes them but not if she makes her own seasoned crumbs. I once asked her how she prepared them and was a little confused as she said she put them in some sort of device that tumbles them to get the breading to stick. I believe no egg dip is involved. I have not yet used this new bag so I hope they are as good as last time.
I don't use them for sauced dishes, just gently sautee them in butter and let them shine on their own. I reserve the sauce for a side like potatoes au gratin or creamed spinach.
