Accidentally ceviched my fish

I prepared dinner very early in the morning to get it out of the way. I bought a variety of frozen fish and decided to cook all of it tonight. I squeezed an entire lemon, added herbs and spices and put in the fridge to defrost. I just pulled the pan out of the fridge to let it sit for an hour at room temp before baking and all the fish seemed to have shrunk in size and it's all sitting in cloudy white liquid. Most of the fish is opaque also.

I still plan to bake it but do you think if I were to do something like this again, it would be safe to eat as ceviche? I've always wanted to make things like sushi and lox but always afraid to try it at home. A friend of mine who loves sashimi and used to eat it quite frequently, actually caught some sort of parasite. She still won't go into detail about it but now she won't consume sushi or sashimi. Food poisoning is one thing, a parasite is something else.
