Thanks Aaron and DanaB! That very simple corn and basil recipe was a huge winner tonight w/me and my husband. I split the difference between the two - used olive oil, but no goat cheese (just to cut down on the fat since the rest of the meal had a lot of saturated fat in it already) and a good amount of basil. The corn was incredibly sweet for this time of year, and had a lot of "milk" in it. It was really very delightful, very creamy texture.
Next time I make this, I'm going to try it w/the goat cheese for sure. I still have 2 more ears, so that will probably be tomorrow LOL. I'll also try it with the butter instead of the olive oil too.
Really so darn simple but overwhelmingly good!
