8 yr old at Michelin 3*

We are taking a family trip to paris in March. My son, a food lover who is accostomed to eating at restaurants, has his heart set on going to a Michelin 3 star. My husband will be taking him alone as I will stay behind with our 6 year old. They will be going at dinner, at the earliest time possible. Which 3 star do you recommend? Are there any that will be more welcoming to a child than others? He would love a cheese cart, and I should also mention that he loves all kinds of meat.
