5 Days in Seattle -- Newbie -- Must Eats, Not Too Expensive?

I'm going to be in Seattle next week for 4 days for a conference, and I'd love to get your help. I'm currently an L.A. foodie (if you'll forgive the term) and I'm interested in interesting eats, especially of the "only in Seattle" genre (or nearly so), and I of course want to sample lots of seafood. All of this on a budget--I'm no pauper, but I'm trying not to break the bank either.

(I'm staying at the Renaissance Hotel at 515 Madison.)
