OK, so I was waiting to meet a business contact in bucolic Concrete, WA last week. He was late, I was hungry, and there's not much choice in beautiful downtown Concrete on Sunday morning (Count the churches).

Mental alarm bells and klaxons thundered as I saw "Dedicated Gluten-Free Bakery", and I swear my right foot yelled to my left to run as I stepped over the threshold.

It's not like I have any principled problem with gluten-free baking or those who do it. It's just that 97% of all the GF products I've tried aren't very good, IMO. But there was also a sign for "Espresso", so both feet went warily in.

I bought a half dozen pastries, ate two of them there with my caffeine, and took the other 4 home. Only ONE of the 6 tasted and chewed like the GF I've had in the past. 5/6 were EXCELLENT, and not in some meaningless "Mayberry" sense, either.

But here's the weird part... It's more of a restaurant than a bakery, with an extensive breakfast and lunch menu and daily all-day entree offerings. And what I saw coming out of the kitchen looked and smelled fantastic. In fact, 5 b's gave me the OPPOSITE impression of a typical country/highway greasy spoon diner.

For people driving WA20 east, there hasn't been much worth mentioning, let alone stopping and eating at, between Sedro-Wooley and Winthrop. Now there's a very promising option.

5 b's website sucks, but that appears to be the only thing. Let your nose and tastebuds judge.
