5 x 3 mini loaf pans

I want to make meatloaf in those mini loaf pans. Read the posts that free form is better but I have these things and I want to stuff the meatloaf with cheese and make them for individuals. It just seems easier. My question: 1) any opinion on those pans being too small for an individual? 2) some said the fat rises to the top but that can easily be dealt with, yes or no? Like, scrape it off, cover with more ketchup or whatever??
