4th of July week in GV- want good food without having to "Dress Up"

Inbound to Greenwich Village for the week of 4th of July for 5 days. This is our 5th? 6th? ok maybe 7th trip to NYC -seems to be becoming an annual anniversary trip for us.
We did a food tour in GV last trip and decided we'd like to check out more of that area so will be staying in the vicinity of 7th & Bleeker.

Looking for good places to eat anywhere in Lower Manhattan, particularly in GV but willing to venture into Midtown also. We like all kinds of foods, have no dietary restrictions and are not afraid to be adventurous. I guess you could call me a "Wannabe Foodie"
Willing to consider all price ranges, the main concern for me is simply, I don't want to dress up! But I do want tasty well made food.
We're from coastal NC where it's casual and hot and we just don't have a need for dressy clothing, nor do I want to pack those kind of clothes when most of the time we will be doing touristy stuff (museums) and wearing jeans. I will carry a dress with me, but it will be a casual one with sandals, and my hubby would have slacks & polo type shirts only.
Both EMP & Degustation sound incredible and I'd love to try either one - at least for our anniversary dinner, but I don't know if we could pass muster on dress codes ( neither has details on their website). I've been reading the CH boards till I'm cross eyed, - but folks don't say much about dress codes.

On previous trips we've been to Carnegie Deli & Katz's so this trip I plan to take RGR's recommendation for Sarges and may hit other spots mentioned in the LES food tour posting (hoping it gets updated before my trip). We will be going back to the Tenement museum so will be in the area for that.
We've been to Joe's and Lombardi's for pizza on previous visits.
Also interested in places to get a drink in the evening & relax that would close to our lodging.
Any comments on McSorley's or Blind Tiger?
And my final question is - where can we eat breakfast in GV early (7 - 8 am)? It seems like most places just don't open up very early - and we are early risers.
