4 days in Florence - restaurant critique

We are off to Florence next week for 4 nights. We studied abroad there about 15 years ago and have been back a few time since. While we have our few favorites, we wanted to add some new destinations and make sure that we would not be disappointed by going back to the old favorites.


Buca Lapi (dined here 2 years ago and loved it) - should we try someplace else for the steak? would love something more local if the steak is just as good or better.
Fuor D'acqua (dined here 6 years ago. loved the raw seafood). Deciding whether to stick with it or try Burro & Acciughe. Reason for seafood is to mix it up between all the heavier tuscan food.
Osteria dell'Enoteca (would be first time)
Del Fagioli or La Cucina Del Garga (would are first time in either restaurant). This would be for our last dinner.

Pitti Gola (dined here 2 years ago. loved it)

We are also doing lunch at Ristoro di Lamole out in Tuscany and a lunch in Rome when we first arrive (before taking train to Florence). Leaning towards Colline Emiliane since its walking distance to Termini in Rome. If there are any other suggestions I would love to hear them.
