Hi, I'm looking for a 2.3 (+0.2) mm copper pan with stainless handles (and stainless interior). Having looked at countless threads on Chowhound, I see that Falk satisfies this criterion quite nicely. The problem is, I have cancelled 5 consecutive orders with Falk now (trying out products that turn out to be the wrong size), and apparently their policy dictates that I'm no longer allowed to order from them, forever.
Any ideas on viable alternatives? I've heard that Mauviel used to do a range, M'250S, but I can't seem to find that anywhere. Someone on the forums (I think it was Claus) said that if you buy from Francecorner, they can order one directly from Mauviel, but after emailing them asking them if this was an option, I was told not only that they didn't do such a thing but that 'stainless handles wouldn't support the weight of the copper pan' (which I know is untrue because the M'250B is basically stainless but with some cast iron sprayed on).
The de Buyer range is too thin for me; the M'250B is too 'chalky' (apparently, it can rub off on the hands); Falk is now out of the equation. I've heard excellent things about Matfer Bourgeat, but the fast-heating and brittle cast-iron handles are off-putting to me. I also don't want tin- or silver-lined, as it's too much of a hassle to maintain.
Any ideas on what my options are? Is this enigmatic M'250S still available to buy, and if so, how do I get one?
