208/240v vs. 120v Portable Induction Range

I know the Vollrath 59500 Mirage Pro comes well recommended, but when the price starts to approach $500, I think you really have to consider 208/240 volt units. Wattage is wattage and 120V appliances are limited in what they can do. (Imagine waiting forever for a med to large stockpot to boil) For a 120v unit I would rather get one more in the $100 price range. The Mirage Pro just doesn't have enough Watts,KW,Volts and Amps to justify that price. I know of course that most homes don't have 208/240 v rated appliance outlets. But it may be worth putting them in. One question I had was if I get a 208/240V unit and plug it into a 120v outlet using a voltage transformer converter, will the range still function ok? I know it wouldn't put out it's max watts, but could it run well enough, without damaging the unit? 208/240V may be required to run fans etc. or maybe it works fine just at a lower power output.
