2008 New Recipe-Vegan Figgy Rice Pudding ala GHG

I'm still keeping this resolution (assuming that I'm not travelling). A while back I requested a vegan rice pudding recipe and goodhealthgourmet was kind enough to share one. Here's the link, so I won't repost the recipe

My only changes were a bit less cardamom (I didn't have ground cardamom, so I broke open some pods and ground them myself--they were VERY fragrant, to say the least) and I omitted the cacao nubs. I fully planned to add them, but my trip to Whole Foods was cancelled through my own silly actions. I'd gone to downtown Indianapolis to meet a friend at Borders before heading on to WF. I wound up locking my keys in my car and I had to wait for the locksmith. Lucky for me, I was right next to Au Bon Pain on Monument Circle, so I could at least have some dinner and wait in the indoor warmth. ABP isn't my favorite place to eat, but the roasted eggplant-mozzarella panini was pretty good. Anyway, by the time I was back in my car, I just decided to go to Trader Joe's (also on my scheduled rounds) and then head home.

Still, even nub-less, the pudding was wonderful. The cardamom adds such a delightful perfume to rice pudding and works well with the cinnamon. The Ficoco is mandatory! For those of you who haven't tried this, it's a fig-cocoa spread (Croatian, I believe) and it is just divine stirred into that pudding. It's pretty divine eaten from a spoon, too.
