15" copper rondeau on home cooktop

EuroflavoredMSP | Nov 5, 201808:37 AM     25

Hi all - will a 15" copper rondeau at 3-ish mm heat evenly on a "high power" home stovetop burner? I'm considering picking one up as I am sometimes constrained by a 12" sauté for making stock. I would like to use a single pot from oven to stovetop. I am considering the purchase of a 15" copper rondeau for this purpose (and of course other things - the surface area is nice for cooking moderate to large amounts of ground meats). I just don't want to buy something that I can't heat. I figured thick copper will heat evenly, but perhaps some of you with direct experience can give specific guidance.
