First the Galatoire waiter dispute and then all the clean up that the mayor is doing. Is there a trend in here? Is New Orleans changing? But we love it because it is what it is.

If is becomes a clean, proper, and lagniappe free city ... would it still be our New Orleans?

How would this affect the dining experience? Would the traditional restaurants change with times and come up with Nouveau Cajun-American-Chinese-etc. fusion food? Could we still get a trout almondine or would they all serve falafel/chili cruste chilean sea bass?
