1 dinner in Tokyo. 1 dinner in Osaka. 1 dinner in Kyoto.

I've been researching nicer/fine dining restaurants in Japan and I'm becoming overwhelmed. So many good ones to choose from.

If you could only pick 1 restaurant to eat dinner at in Tokyo, 1 in Osaka, and 1 in Kyoto, which would you choose? We'll be eating all of the local cuisines throughout the day, but we want to do a Michelin or nicer restaurant in each city for dinner. We're also staying at a ryokan in Hakone so we'll be having kaiseki there.

Right now we're wait-listed at Tapas Molecular Bar at the Mandarin Oriental in Tokyo but not sure we'll get in.

Price isn't really an object, although the yen equivalent to $100-200 USD is ideal. Willing to spend up to $300 if it's worth it. Normally we skip the wine pairings in favor of a few cocktails, but if a wine pairing is a must willing to do that too.

Also, we're going at the end of this month so I'm sure it won't be easy making reservations with 2 weeks notice. So if you have a backup restaurant, might as well throw that out there too. We'll see what we can get in to. Thanks!
