New/Interesting Cuisine in Lafayette, LA?

This is my first post here, so bear with me. Let me know if I do anything wrong. ;)

I am always interested in what I suppose could be termed "nouveau cuisine", but is basically just using foods in very different combinations and preparations then you'd typically find. It typically breaks the "rules" that traditional chefs follow, and often fuses cooking styles. Stuff like pear-brie cheese quesadillas, sirloin with blue cheese bread pudding, and a whole bunch of other stuff I can't remember.

My question is: has anyone found a nouveau cuisine restaurant in or around Lafayette, LA? I have been to some good places around here, but I find that they are pretty much using the "rules", which is to be expected in a predominatly French Catholic region. Anyone found somewhere interesting?
