Help w/ BBQ Baby Back Ribs on a Weber Grill

I need advice on how to cook baby back ribs on my new 22.5 Weber grill for this weekend. I've got 2 racks approx. 6 lbs total. Need some help with time and temps. After much reading here, it was suggested by Woodburner to bbq for 2.5 to 3 hours @ 250*- 300*, but that was for spareribs and not baby backs. What temp am I trying to reach... 190*-200*? I'd like to use the "fuse" method, low and slow. No sauce, only a rub. Should I use the rib rack I have... or just lay them flat? I've got a vinegar sauce for afterwards. (I'm in NC) Any help would be greatly appreciated for my first attempt. Happy 4rth!!!
