Chile con Carne, is translated as "Chili with Meat," and that says it all. But we'll say more anyway. Also called "bowl of red" by Texans, this stew of meat, onions, and tomatoes has a Spanish name but originated in the Lone Star State. There are many variations of chili as there are stars in the sky, it seems, but this one uses chipotles en adobo sauce, which lends a smoky flavor that we find appealing. Be careful with those chipotles, though. They're hotter than they look.
