So you're making all these decadent dips, but now you're going to go buy your tortilla chips? Really. All you need are 2 cups of canola or vegetable oil, 10 (6-inch) corn tortillas, and Kosher salt for seasoning. You cut the tortillas into 8 eight wedges, and this should make 80 chips. Don't even think about using flour tortillas, especially if you're going to the trouble to make these yourself. These salty, crunchy corn chips are also ideal for dunking in salsa or topping with cheese for homemade nachos.
