It's the balmy weather, blue waves, and relaxed, luxurious vibe of the French Riviera, on your plate. Niçoise salad is a composed salad hailing from the capital of the French Riviera, Nice. It usually has Niçoise olives, tomatoes, hard-boiled eggs, anchovies, and potatoes. A Niçoise olive is small and black with a rich, nutty flavor. Our version of the Niçoise salad is over butter or Bibb lettuce, with green beans and good-quality, oil-packed tuna. This is not a side salad by any means.
