Doing something unexpected is impressive. Most of us know and love traditional lasagna, whether it has meat or not. but there are so many other ways to go about lasagna! This recipe uses basil pesto, which is a wonderful addition, and a ricotta-pea filling. The deliciousness is layered between traditional noodles (we didn't change everything) with pine nuts for a new take on vegetarian lasagna. If your in-laws aren't vegetarian, they won't even notice there is no meat because it's so filling and interesting.
