Taco soup is a North American dish, Tex-Mex more specifically. It's inspired by tortilla soup, also called sopa azteca de tortilla, which could have originated in Mexico City. Like many good recipes, this classic soup recipe begins by sauteeing finely chopped yellow onions in olive oil until soft. Then you brown the ground beef, drain the fat, if any, and add the rest of the ingredients, including black beans, diced fire-roasted tomatoes, chicken broth, clinatro, and green chiles. The toppers for serving are important too: sour cream, shredded Monterey jack cheese, cilantro, and of course, tortilla chips.
