Sweet-tart passion fruit has a flavor that can skew toward main dishes or desserts. Brandon Nelson mixes it with sweet chile sauce and uses the result in a chicken and mushroom stir-fry, serving over soba noodles. “That’s one of my family’s favorites,” he says.

Acantha says, “I make syrup, then use the syrup to top cheesecake or make lilikoi lemonade. Just use any simple syrup recipe and add the juice or pulp to it. If you’re going to use it for topping cheesecake you want to make the thick simple syrup so it isn’t runny, but for lemonade you can go with the thin or thick since you’re probably going to add a bit more sugar anyway.”
