Mansoura, the venerable Brooklyn confectioner, has learned a few things in its time, which goes back to 18th-century Syria. One is how to make loukoum, or Turkish delight. This is one amazing treat, Peter Cherches promises, “full of pistachios and just the right amount of rosewater—not too perfumey, and not too sweet.”
