Daing na bangus is a Filipino dish of marinated, fried milkfish, which Steve describes as the “archipelago’s great contribution to the world menu.” While Filipino food as prepared in the United States can often be disappointing, says Steve, he has yet to be let down by daing na bangus: “It’s delicious, usually vinegary and crispy, and just plain tasty. My favorite version is served very hot, very crispy, and kind of ‘overcooked.’ But it’s very good served cold or room temperature served with sliced tomato as well.” The end result is like a nice smoked fish, he adds, and is “so good, it should be known the world over.”
