Kentucky Fried Chicken is about to become Kentucky Grilled Chicken, at least in part, according to the Associated Press. A new grilled version of the chicken will feature less fat, fewer calories, and less sodium than the standard tub o’ grease on offer at the chain’s thousands of U.S. locations. It will still feature bones, however. Grilled chicken is now being tested in six U.S. cities, and is expected to roll out all over the country next year.

Restaurant analyst Larry Miller puts a fine point on the restaurant’s big obstacle to success: getting people to associate (relatively) healthy eating with KFC. “If they can get people over the hump — which is ‘Do I believe KFC can sell me a healthy alternative?’ — they’ll increase their [customer] frequency,” Miller said.
