Chengdu Snacks, the Sichuan outlier among the mostly Taiwanese vendors in the Flushing Mall Food Court, has a big winner in its steamed spare ribs. Peter Cherches describes meaty chunks of rib on the bone in a mound of moist, fluffy, spiced rice flour, "fabulous and only $4.50."
They're the best he's had in a quarter-century, since the demise of the old Ting Fu Garden in Chinatown. "Other versions I've tried recently have been either bland, dry, or full of totally fatty pork," Peter says. "This one was sublime."
