Scientists in Australia have figured out an exciting new way to help up your vegetable intake. Now you can add an extra serving of broccoli to your diet just by drinking coffee. And you’ll also be helping to cut down on food waste in the process.
Australian government science agency CSIRO and agriculture group Hort Innovation have been taking broccoli bunches that have been deemed unsightly by grocery stores (but are totally healthy to consume despite their physical imperfections) and are grinding them into a powder that can be incorporated into a number of other foods, like smoothies, soups, and baked goods.
But one cafe in Melbourne is utilizing this powder in an unexpected way, by adding it to their coffee beverages. In terms of their coffee making process, the powder is mixed with espresso after it’s been poured. Then, steamed milk is added and more broccoli powder is sprinkled on top. In terms of flavor, we’re guessing it tastes earthier than your typical latte, but if it means we can skip an extra salad, maybe it’s worth it?
Just two tablespoons of the powder boasts the nutritional equivalent of one serving of broccoli and is an excellent source of fiber, vitamin B6, vitamin E, and manganese. CSIRO’s lead researcher on the broccoli powder project, Mary Ann Augustin, hopes that it will help address public health concerns. A CSIRO survey last year found four out of five adults in Australia weren’t getting the recommended daily amount of fruits and vegetables.
The organization claims the next step is to figure out how to bring the product to the consumer market, so it can be more widely available on a commercial scale. But even if that happens, I’m not sure how many of us will be clamoring to dump the stuff in our coffee. We’re sticking with smoothies, thank you very much.
