Here’s how to make clarified butter for your next cooking session:

  1. Melt two cups of regular, unsalted butter in a saucepan over medium high heat.
  2. Continue cooking at the same temperature until a layer of milk proteins and water separate out from the butterfat and rise, creating a white cap on the surface.
  3. Turn the heat up to high and bring the butter to a boil until the white cap becomes frothy.
  4. Turn the heat down to low and continue cooking until the cap at the surface begins to decompose.
  5. Continue to gently simmer until the pieces on the surface sink to the bottom of the pot and the bubbles cease in the simmering process.
  6. Once the milk proteins have completely sunk to the bottom of the pot and the simmering process stops, remove the pot from the heat.
  7. Gently pour through a cheesecloth or coffee filter-lined colander into a heatproof container to separate the clarified butter from the milk proteins.
  8. Cool to room temperature. Transfer to a container with a lid and refrigerate. Clarified butter will keep refrigerated for up to six months.
