Thinking Italian, Korean, and American at Piora

Flavors of Italy and Korea meet happily in the New American cooking at Piora. Winning dishes from Chef Chris Cipollone, who cooked at Tenpenny, include Rohan duck; barbecued octopus with basil, pine nuts, and gochujang chile paste; and, for starters, monkey bread with lardo and seaweed butter.
