Ramen is different from place to place—flavored with soy in Tokyo and miso in Sapporo, steeped in rich pork broth in Kyushu. At Dassara in Carroll Gardens, it’s served with deli meats and matzo. That’s Brooklyn-style ramen, as Dassara’s owners call it, an eclectic approach that also includes a tasty mazemen (pictured) with manila clams, parsley, oil-cured chiles, and scallion pancakes, fishermb reported recently on Chowhound.

He also recommends ramen in chicken broth with pork belly, chard, and poached egg. Among the starters, try steamed buns filled with chicken adobo, delicious though pricey at two small buns for $8.
