Once available only in Texas, Ro-Tel canned tomatoes with chiles are showing up in markets all over the country. They’re a favorite of Chowhounds for adding a bit of zing to everyday cooking.

Warmed, they make a fine topping for baked or grilled chicken or fish. kubasd heats them with canned black beans and corn, seasoning the mixture with cumin, coriander, and cayenne, to serve over baked sweet potatoes for “a hearty, filling, and VERY fast dinner.”

Will Owen browns turkey thighs and onions, then braises them in a can of Ro-Tel tomatoes. cheesecake17 browns chicken, bell peppers, mushrooms, onions, and garlic before simmering with the tomatoes. Others use them to flavor chili, meatloaf, and bean soups.

Several hounds cook sliced zucchini and onion in a can of Ro-Tel tomatoes until tender, then melt mozzarella or Monterey Jack cheese over the top. This is “[m]y idea of summer side-dish heaven,” tacosandbeer says.
