Ingredients (5)

  • 2- cans of wild caught salmon (7.5 oz each)
  • 1 cup of chopped onion
  • 3 tablespoons fresh parsley minced
  • 2 teaspoons tarragon
  • 2 raw organic eggs

I love wild caught salmon so this little recipe is fabulous for creating a fast dinner that tastes delicious and you know it’s full of Omega 3’s and lean protein.

Instructions

  1. 1Mix ingredients and form 12 patties (or 2 dozen meatballs).
  2. 2Heat 4 tablespoons olive oil in a large fry pan.
  3. 3Cook patties over medium heat. Flip after 6 minutes for a total cooking time of 12 minutes.
  4. 4Transfer patties to a paper towel to absord the extra oil.
  5. 5Compliment these great tasting salmon cakes with wild rice, steamed cauliflower with a cheese-white sauce and a cucumber-tomato salad.
