Culinary traditions are important on Jewish holidays, and for the seven or eight days of Passover, you'll be celebrating this major spring festival commemorating the liberation of the Israelites from Egyptian slavery. That means you'll need to cook up a bunch of dishes for The Feast of Unleavened Bread, least of which is some matzo ball soup, and probably brisket or roast chicken, and potato kugel.
