Maybe you’re a hardcore keto fanatic, maybe you’re just trying to stick to your New Year’s resolution; either way, this spicy cauliflower mac and cheese recipe is for you. It comes from “Easy Keto in 30 Minutes”, by Dr. Urvashi Pitre, a blogger who lost 80 pounds on the keto diet.

The cheesy dish devoid of carbs and chock-full of cauliflower with a spicy kick is incredibly simple to make. Just whip out the cast iron skillet, and enjoy!

Tips for Bacon

Instructions

  1. 1Heat a large skillet over high heat. Add the bacon and cook, stirring occasionally, until crisp, 8 to 10 minutes.
  2. 2Meanwhile, in a large bowl, combine the cauliflower, cheese, whipping cream, cream cheese, pepper, and salt. Mix well.
  3. 3When the bacon is cooked, add the jalapeños to the pan and cook, stirring, for 1 minute. Add the cauliflower mixture and stir well to combine. Cover and cook over medium- low heat until the cheese has melted, about 8 minutes; stir to combine.
