Zuni dinner tonight! Buttermilk mashed potatoes questions...

Hello friends!

Tonight I am making the Zuni Chimay-braised short ribs with buttermilk mashed potatoes for dinner! I am very excited....I am having a couple of "meat and potatoes" friends over for dinner, and I'm trying to slowly broaden their horizons a little.

Anyway, when I went to the grocery store last night, I was unable to find buttermilk or Yukon Gold potatoes. I will try a different store today, but I was thinking...

1) If I can't find buttermilk, or even if I can, how do we think stirring in some creme fraiche would work as an alternative? I love that flavor, it's got the tangy thing going as well, and...well...I have some sitting in my fridge :)

2) What should I use if I can't find Yukon Golds????

3) I was thinking about roasting some veggies as a side. Asparagus with truffle oil or roasted green beans with walnut oil?
