Another Zuni chicken question...

I read, with much interest, the detailed recipe for the Zuni chicken. It does sound wonderful. However, much of the gloriousness seems to be in the extra crispy skin, and we aren't eating chicken skin much lately...trying to cut down our fat and cholesterol intake. Is the chicken meat itself worth going through all the Zuni trouble?
