Zucchini Bread

I thought I'd share this recipe. It wasn't originally mine but I made a fair amount of modifications and tweaking that I think I can claim it as my own.

2 for one zucchini bread
This recipe makes 2 loaves, one chocolate and one walnut raisin.

2 cups Flour
2 tsp Cinnamon;3 if desired
2 tsp Baking soda
1 tsp Salt
1/2 tsp Baking powder
3 Eggs
2 cups Sugar
3/4 cup Vegetable oil
1 tbsp vanilla
2 cups Zucchini;grated and well drained in a colander for at least an hour

1/2 cup cocoa powder
3/4 cup chopped walnuts
1/4 cup raisins


Preheat oven to 350. Sift first 5 ingredients. Beat eggs in a large bowl until light. Gradually add sugar and beat until thick and lemon colored. Add oil in thin stream and beat well. Add vanilla. Mix in zucchini. Add sifted dry ingredients and blend well.

Divide the mix equally into two bowls.

To the first bowl, add the cocoa powder and mix well. To the second bowl, add the walnuts and raisins and stir just until mixed.

Turn into 2 greased and floured 8x4 inch loaf pans. Bake until tester inserted in center comes out clean, about 50 minutes. Let cool 5 minutes before turning out onto rack. Cool completely before slicing. Makes 2 loaves.

* The chocolate bread makes a great dessert served with a dollop of fresh whipped cream.
